some of you asked the other day for that crockpot lemon-and-olive chicken recipe i tried out... here you go, it turned out really good!
into a large crock, place:
1 whole chicken or 6 chicken thighs
1 medium onion, julienned
1 bay leaf
2 cinnamon sticks
1/4 tsp saffron threads or curry powder
3 cloves garlic, sliced thin
1/2 tsp ground ginger
1c chicken stock or water
put crock on High for 4-5 hours. about 30 minutes before chicken is done, add 1 sliced lemon and 1/2 can of pitted green olives (rinse olives 1st).
serve chicken with pita bread... use the pita instead of a fork to tear apart the chicken and sop up the juices. (if desired, put some of the crockpot liquid in a saucepan, reduce, and pour over chicken before serving.)

Date: 2009-09-09 11:43 am (UTC)I wonder, how would it be to just stuff the cavity with the olives and the lemons? Do you think the olives would hold up if they were cooking with the chicken the whole time?
