the scale is back down to the weight i was at last week's weigh-in. i was getting nervous there for a bit. it's funny to think that i was actually pissed that the scale had crept up to 170, considering that a few months ago i would have KILLED to be 170. hee. i'm back down to 168 this morning, so i'm guessing i ate something with a lot of salt in it or something.
i tried a new dessert recipe today that has every pleasure receptor in my brain going *zing!!!!!!*... it was posted on the WW message boards as "almond joy pudding", but to me it tastes like chocolate cake batter. *drool* i changed the recipe a teeny bit (swapped out evaporated milk for some of the regular milk), here it is:
in a bowl, mix 1 box sugar-free fat-free chocolate pudding (i used "chocolate fudge"), 1/4 cup skim milk, and 1 12-oz. can skim evaporated milk... beat 2 minutes until it starts to thicken. stir in 1 and 1/2 tsp coconut extract and 1 cup uncooked oatmeal. chill for 1 hour. serves 4.
okay, i need to get my butt in gear... first hooping class in a couple of hours! yay!
