this morning my group is doing a team-building activity... we're putting together kids' snacks for a local food pantry. i'm glad we're helping out, but guess what the snacks are? dirt pudding and PB&J. considering i'm sugar-deprived and PMSing, it's going to take all my willpower to not stick my face in a tub of chocolate pudding. *chuckle*

speaking of snacks, last night i made maple frozen yogurt in the little ice cream maker. it was INSANE. fat-free greek yogurt, a blurt of sugar-free maple syrup, and some fat-free half and half... and somehow that turned into absolute heaven. and because i used the greek yogurt, it didn't taste fat-free at all... soooo good. forget ice cream, frozen yogurt is it for me now!

ooh! The maple frozen yogurt sounds really good! Can you pass along the recipe or did you pretty much do that in the last post? I've been a skimmer as of late ;-)

I have an ice cream maker, but being lactose intolerant, I'm always looking for dairy substitutes. I know that yogurt is dairy too, but for some reason, I can tolerate it a bit better than whole milk/cream ice creams or even worse gelato.

i'm the same way, i seem to do better with yogurt than with ice cream. the recipe was easy:

2 and 1/2 c plain yogurt (i used fat-free greek yogurt)
3/4 c maple syrup (i used sugar free)
3/4 c light cream (i used fat free half and half)

mix until all yogurt lumps are gone, chill in fridge until the temp is around 40 degrees, and then throw it in your ice cream machine. that's it.

i love this because using greek yogurt made it a bit tangy-er, and it was super thick even though it was fat free. i also added a few drops of maple extract because i felt it wasn't maple-y enough.

wow i'm going to try this... i haven't used the ice cream maker in years never thought of using yogurt:)

why do you think it has to be chilled first?

i don't know, i'll have to consult my book. some of the recipes have to be cooked 1st, so it may be just so any warm liquid doesn't hit the inside of the cold unit and either crack it or melt it. but last night on top chef one of them was making ice cream, and they made a comment about "my ic cream base isn't chilled yet". whaddaya know.

Oooooh, I think we have an ice cream maker somewhere in our basement hodgepodge of unused kitchen appliances. That yogurt sounds delicious! I keep trying to incorporate more plain yogurt into my diet, but so far all I can think to do is scoop it over some defrosted frozen berries and add slivered almonds. Which is delicious, but I'd like some variety.
