since i was stuck at home sick yesterday, i decided to try baking a cheesecake. i've got a lot of potluck parties to go to over the holidays, and i wanted some sort of a "signature" dish to bring around... i'd seen a recipe for a low-carb pumpkin cheesecake (no crust, and made with splenda) and thought it'd be a perfect way to have something sweet without completely sabotaging the whole south beach diet thing.

well, jesus, it took freaking forever. you have to bake it for an hour... then let it sit in the oven with the door open for another hour... then let it cool to room temp on the counter for 2 hours... then put it in the fridge for 8 hours. it took the entire day! and when all was said and done (at 11:00 last night), it turns out the middle wasn't completely cooked, and so basically i have a 12-hour pumpkin mousse. i don't know if i'll try it again at some point... it was just so involved. i will say, though, it tastes pretty darn good... and after taste-testing it all day yesterday, i stepped on the scale this morning and was down a pound. yay splenda!

i can't believe i have to work today. this damn cold cheated me out of 3 days of holiday vacation, and i'm right back at work. grrrrrrr. but i get the kitties back today, and i'm putting up my tree, so it'll be all love-y and home-y and holiday-y in the apartment tonight. that makes me so happy.
