pumpkin fluff
ingredients:
15-oz. can of pumpkin
1 small box sugar-free, fat-free butterscotch pudding
1 small box sugar-free, fat-free vanilla pudding
3 cups skim milk
pumpkin pie spices (cinnamon, ginger, and/or nutmeg)
mix milk and both puddings together in large mixing bowl. (i substituted cheesecake pudding for the vanilla.)
mix in pumpkin, add spices to taste (i used somewhere between 1/2-1 tsp each).
put in fridge for 1/2 hour, serve 1 cup per serving with sugar-free cool whip if desired.
i've been working on core-ifying more foods... i figured out pizza (a "carbdown" flatbread with homemade sauce and spices, skim mozzarella and 10 slides of turkey pepperoni is mostly core + 2 points), and have decided that canola oil isn't going to cut it when cooking my eggs so i'm switching to butter spray. and i'm just not a big fan of the fat-free half and half, no matter how much i try... i'm still debating whether it's worth it to add regular half and half back into my coffee and lose 7 points out of my weekly 35 for it. dunno.
