week 2 weigh-in is tomorrow.
Oct. 26th, 2008 01:08 pmshould be interesting, considering that i was totally sedentary for 5 days due to my stupid back, and ate dinner out both last night and tonight. the thing i have going for me is that i've tracked everything i've eaten religiously, and still have 11 points to blow tonight on dessert. according to the scale, i'm down 1 pound from last week... and if i can keep that tomorrow, i'll be thrilled.
for any WW or healthy-type eaters out there, i made an awesome dessert-y snack-y thing this morning that i wanted to share.
i wanted to do something with apples, since they're in season right now... this came out sooo good. best part is apples are a core food (pardon the pun), and the teeny bit of butter and brown sugar only add 1 point total to each serving. SO worth it.
sauteed apples
ingredients:
2 apples (i used golden delicious)
juice from 1/2 lemon
1 tbsp splenda brown sugar blend
dash of rum extract
1 tbsp butter
cool whip free
instructions:
core and chop the apples into small chunks
in a small saucepan, melt the butter until it just begins to bubble
add the apple chunks, brown sugar, lemon juice, and rum extract; stir to combine
turn heat to low and cover
cook on low for approx. 3 minutes, just until apples are hot and starting to soften and release juice
put 1/3 of the hot apple mixture in a bowl and top with a dollop of cool whip free
makes 3 servings, 1 point each
